Seasonal Flavors: Mounds Bars

Here’s a wonderfully simple holiday cookie bar that approximates the Mounds Bar candy bar. The recipe comes from The Aunts: Aunt Kay, Aunt Mary and Aunt Rose. They all made them and sent some home with us each Christmas, along with assorted other goodies.

All you need is a pan with very square edges, to make cutting easier. These look festive on the plate and are absolutely delicious.

“Mounds Bars”

  • 2 cups graham cracker crumbs (I highly recommend the Nestle red box; much superior to the blue box)
  • ½ cup melted butter
  • ½ cup sugar
  • 8 oz flaked coconut
  • 1 can sweetened condensed milk
  • 12 oz. chocolate chips
  • 1 T peanut butter

Mix the cracker crumbs, the butter and the sugar, spread into the bottom of a 13 x 9 metal baking pan.  Bake at 350°F for 10 minutes.

Mix the coconut with the sweetened condensed milk and spread this on top of the cracker crust.  Return to the oven for 15 minutes.

Remove the pan from the oven.  On the stove top, melt the chocolate chips with the peanut butter.  Spread this on top of the coconut layer.  Allow to cool completely. Naturally, I’m making these in December, so the cooling takes place on the porch.  

When cooled, use a very sharp knife and cut into one inch squares.
