One of my favorite greeting cards shows a series of seven avocados. They are labeled:

So true! There is nothing more frustrating than buying avocados and discover, when you cut them open, that they are brown and yucky. But here is a solution, if they aren’t too far gone—make pudding. Seriously. My friend Linda gave me this recipe and it’s delicious. I make it when the avocados elude me in catching them at their peak for use in guacamole.
You can use a fork, a mini-food processor, a standard blender, or an immersion blender to mix the pudding. I’m giving the recipe for a single, over-ripe avocado. Multiply as needed.
Avocado Chocolate Pudding
- 1 over-ripe avocado
- 2 T cocoa powder
- 3 T maple syrup
- ½ tsp. vanilla
- Pinch of salt
- 2 T water
Mix. Chill. Enjoy.
