Dick’s Feta Dip

My brother-in-law Dick has been a sports star–football in high school and at James Madison University. He worked in IT at Rockingham Memorial Hospital and then headed up the computer network at JMU. He’s also civic minded, a big volunteer for various causes, and of late he is volunteering in COVID vaccine sites. Dick is an exercise enthusiast, spending lots of quality time at the gym (before the pandemic), and now on the streets of Harrisonburg biking or walking.

Perhaps my favorite fun fact about Dick is that years ago his neighbors were complaining about the newspaper delivery problems on their street–so he took over and delivered newspapers for twenty years. “I’m up early anyway!” he said. So yes, a high-profile university administrative faculty member was also the paperboy. God bless America!

A few years ago, Dick took up cooking and soon assumed all the meal prep for the household. My sister was thrilled and we have all benefited. We often ask him to bring his famous feta dip and I’m happy to share it here.

Dick’s Feta Dip

  • 8 oz cream cheese, at room temperature
  • 8 oz crumbled feta
  • 2/3 cup mayonnaise
  • ½ tsp dill
  • ½ tsp oregano
  • ½ tsp dried basil
  • ½ tsp thyme
  • 2 cloves garlic, pressed

Combine all ingredients and refrigerate for at least an hour before serving to allow the flavors to marry. Serve with crackers or raw vegetables.
