Seasonal Flavors: Marin’s Whole Wheat Herb Pizza Crust

I once spent a cold, beautiful day in the mountains outside Salt Lake City. Stacee and I went snowshoeing, while Marin and the men skied. Picture that crisp, cold air and then our return to a cozy cabin and two joyous dogs.

Marin and Stacee whipped up this pizza and I thought it so ingenious: herbs in the crust!  The whole wheat made it hearty and filling after a day outdoors. As I recall, Marin topped it with tomato sauce, mozzarella, and some vegetables. We had some beautiful conversation that evening, and a terrific meal.

Marin’s Whole Wheat Herb Pizza Crust

  • 1 cup warm water
  • 2 T brown sugar
  • 1 T yeast
  • 1 tsp salt
  • 2 T olive oil
  • 1 ½ tsp basil
  • 1 ½ tsp oregano
  • ½ tsp garlic powder
  • 1 cup whole wheat flour
  • 1 ½ cup unbleached white flour

Mix all ingredients to form a soft dough. Knead for five minutes. Allow to rise near the wood stove, for 20 minutes.

Preheat oven to 350°F. Roll the dough to fit a large sheet pan, or divide and roll to fit two smaller pans. Use vegetable spray or olive oil to grease the baking sheet, then place the dough on the sheet.

Add the toppings of your choice and bake for ~20 minutes till toppings are bubbling and the crust is browned.
